  • 6 cups of flour
  • 1 tablespoon powder yeast
  • 1 cup of warm milk
  • 1 cup of yogurt
  • 1 water glass measure of oil
  • 1 teaspoon of granulated sugar
  • 1 teaspoon of salt
  • 4 leeks
  • 2 onions
  • Half a glass of tea with olive oil
  • 100 gr curd cheese
  • Salt
  • black pepper
  • 1 egg yolk
  • 2 tablespoons melted butter
  • 1 teaspoon of chili peppers
  • 1 teaspoon of oregano


Put the yeast powder and warm milk in a bowl and mix until the yeast has dissolved. Add yogurt, oil, salt and powdered sugar and mix. Gradually add the flour and knead a smooth dough. Cover the dough with a cloth and let rest for 30 minutes. Peel and chop the onions. Clean the leeks and cut into thin slices. Heat the olive oil in the pan. Add the leek and onion to the pan and stir for 7-8 minutes over low heat. Sprinkle with salt and pepper and remove from heat. Add the cheese, mix and allow to warm. Take the dough on a floured ground and open it with a roll as a large dough. Add leek mortar. First, roll the edges of the dough into a square shape. Then fold in half to make a rectangular shape. Cover the baking tray with baking paper. Put the dough in the tray. Mix the egg yolks and melted butter and spread with the dough. Sprinkle with pepper and thyme and leave for 20 minutes. Bake in a preheated 180 degree oven for 30 minutes. Slice and serve warm. Bon Appetite.
